Abstract : Objective: This study aimed to investigate the hypocholesterolemic effect of standard active yogurt and probiotic yogurt fermented with B. lactis/ animalis, L. acidophilus and L. gasseri in rats fed on a high-fat diet. Method: Twenty-four male Westar albino rats were distributed randomly into four equal groups (6/ group). First group was Control Negative: fed on a normal diet, Remaining groups were fed on HFD for 8 weeks to induce hypercholesterolemia. Then, the groups were classified as follows: Control Positive, fed on HFD alone, Standard Yogurt Group, fed on HFD with standard yogurt, and Probiotic Yogurt Group, fed on HFD with probiotic yogurt daily for six weeks. Blood samples were collected for biochemical analysis for lipid profile, liver enzymes and antioxidants status. Histological examination of heart and liver was also performed Results: Results showed that feeding HFD with Standard and probiotic yogurts significantly reduced levels of Total Cholesterol (TC), Triglyceride (TG) and Low-Density Lipoproteins (LDL) compared to control positive. Also, they significantly increased the level of High-Density Lipoproteins (HDL) (P < 0.01). Furthermore, they decreased the percentage of body weight gain BWG% compared to control positive and was more noticeable in the probiotic yogurt group. Also, they significantly reduced liver enzymes (AST) and (ALT) levels and significantly increased antioxidants levels of Glutathione (GSH) and Superoxide Dismutase (SOD) compared to control positive (P < 0.01). Histological examination of heart and liver tissues showed that groups fed on standard and probiotic yogurts had alleviated the histopathological degeneration changes compared to control positive and was more noticeable in probiotic yogurt group Conclusion: Present results showed that both standard and probiotic yogurt were effective to improve lipid profile parameters and antioxidants status in hypercholesterolemic rats. Probiotic yogurt was more beneficial in tissues level, which suggests the long-term effect of probiotics in the prevention of heart and liver diseases.
